Scaloppines is Italian for thin slices of meat using veal most often or known as cutlets.
In Germany & Austria when breaded & fried are called; "Weiner Schnitzel".
Cassa's Signature Dish
Veal Scaloppine
1 lb. veal pounded 1/8 inch thick, season with black pepper & salt and garlic powder.to taste.
1/2 cup flour
4 tbs butter
2 tbs olive oil
2 tbs lemon juice
1/3 cup white wine
2 tbs capers (optional)
2 tbs fresh parsley
Pork Tenderloin ,turkey or chicken my be substituted .
Place Veal inside large plastic kitchen storage bag. Pound veal to 1/8 inch. Use same bag. Add the flour place Veal slices inside and shake to coat all pieces.
Heat skillet with 2 tbs of the butter and the olive oil until hot. Add Veal few pieces at a time until all is browned and cooked through.
Remove to platter and keep warm.
Add lemon juice and white wine to skillet drippings scrapping up browned bits; add remaining 2 tbs butter and parsley.
Return Veal to sauce to heat through.
Serve with salad and crusty Italian bread to sop up the gravy.

8 oz Dates
1 cup sugar
1 Tbs Butter
1/1/2 Cup hot water
2/3/4 cup flour
2 Tsp baking soda
1/1/2 Tsp salt
1 Egg
1 Tsp Vanilla
Chopped nuts
Soften first 4 ingredients, add to remaining 6 ingredients.
Bake in loaf pan . 350o 1 hour.
12 - 14 pound turkey
Butter about a pound
2 med onions chopped
4-5 stalks of celery chopped
1 granny smith apple chopped(Optional)
1 large egg
1 loaf white sandwich bread
1 tsp thyme
3 tsp sage
1 tsp salt
1 tsp black pepper
Hand full fresh parsley chopped.
Chicken broth.
Saute celery,onion in 1 cup or 2 sticks butter till tender add enough chicken broth to bring it all together. Don't want to much.
While celery mixture is sauteing, in a large bowl place the bread that has been cut up in cubes, the apple, herbs and beaten egg. Pour celery mixture over all.
Mix well then stuff the turkey.
Remaining butter can go into the roaster.
2 small cans raw pumpkin'
1/4 tsp ground cloves
1/2 tsp nutmeg
1/4 tsp ginger
1/2 tsp cinnamon
2 eggs
3 overflowing wooden spoon full of molasses
1 cup sugar
1/2 tsp salt
2 Tbs flour
1 cup whole milk or use canned milk.
Mix thoroughly pour into shells .
Bake 350o until silver knife comes, out clean.
Note: Take tin foil cut out middle to leave a ring ,cover crust to prevent from burning.

Mixed greens,roma tomatoes,carrots,cumber,pepperoncini & Kalamata olives with Cassa's house dressing.
Big Caesar for two..
Romaine,parmesan,anchovy & toasted croutons.
Cassa Della Casa
Artichoke & olive salad, fresh mozzarella, tomatoes &pesto drizzle.
Marshmallows
Put them on the bottom of pan . They will rise to the top while baking.
Lumpy Gravy:
They say a pinch off salt will undo the goo. "They" are those that know!
De-salt Ham:
Cook one hour/ pour off juice/ Add Ginger ale over Ham/ cook one hour .
Steak / Meat: White fat means the meat is tender while yellow fat means tough.
Frying:
Add one tbs vinegar to oil before frying.
Always use cake flour for cakes....
1/2 pound real butter
5 tbs. sugar
2 cups flour
1/2 tsp salt
1 tsp vanilla
Mix. Roll into small balls, mash balls down with a fork that has been dipped in sugar making a criss cross pattern .
Bake 350o until browned.
Classic Antipasta Cassa Royal Caviar
1/2 pound Mushrooms chopped
3 tbs butter
1 cup chopped onion
1/1/2 tsp paprika
1 tbs lemon juice
1/4 tsp salt 1/4 tsp pepper
1/2 cup sour cream
1/4 cup dill weed or crushed seeds
2 tbs chives
Saute first six ingredients. Add remaining ingredients.
Serve on toast points, crackers etc...
Chicken Cacciatore naples style
Brown chicken coated with seasoned flour, in 1/2 cup olive oil with 3 cloves garlic.
You can use a crock pot for this recipe, let simmer all day long.
When all chicken pieces are browned place them in the bottom of cooker.
Pour your favorite spaghetti sauce recipe over all , add sweet dark wine.
Cook slow until chicken is tender.
Serve with pencil points pasta and salad and garlic bread.

Melt some butter in skillet.
Add fresh Ricotta Cheese ,
pour whipped eggs ( amount is up to you) on top of the cheese.
Cheese melts and blends in with the eggs for a light fluffy breakfast for anytime omelette. "GODA"

1 tbs chopped chives
Melt butter add remaining ingredients.
fill cocktail muffin pan 2/3 full.

The Soak:
Thehouseofruthanne uses fresh fruits chopped . Oranges,Tangerines,Pineapple,Grapes,Apples, or whatever your taste, , along with any juice extracted to make Cassa'a Classic Fruit Cake Dessert. Canned fruit may be substituted.
Add Orange peel, Lemon peel, Maraschino Cherries.
Place all in a large jar or crock, add Dark Jamaica Rum, whiskey,brandy, dark sweet wine and vanilla.
Amounts vary accordingly to your needs.
Soak is best if it is stored in refrigerator for a full year before using, although who can wait that long to take a nip or two, just remember to replace amount used.
Nuts, any kind chopped course and coated with flour. Reserve for cake batter.
The Cake:
1 package Pineapple Cake Mix
3 eggs
1/2 Cup oil
Mix. (Do not add water)......
Add drained fruit and as much of the liquid to make a wooden spoon stand up in the batter.
Add the nuts'
Note: If you went overboard with the liquid add another cup of flour.
Pour into bunt pan sprayed with Bakers Joy Baking Spray.
Bake 1 hour or until toothpick comes out clean.

When you serve this Fake Apple Pie know one will have to know it's made out of crackers instead of real apples. "Don't tell Them!!
When warm from the oven,topping of cheddar cheese or ala-mode.

Mock Apple Pie
Crust for 9 inch pie.
1 pack Ritz crackers about 36 crackers.
2 cups water
2 cups sugar
2 tsp cream of tarter
2 tbs real lemon juice
grated lemon rind from one lemon.
Butter
Cinnamon
Break crackers in the bottom of pie crust. coarsely
Combine water-sugar-cream of tarter in sauce pan and simmer gently for 15 minutes. Add lemon juice and rind; cool.
Now! Place the pie shell with crackers on a sturdy cookie sheet.
Slowly pour cooled syrup over crackers.
Dot with the butter
and sprinkle the cinnamon. Cover with top crust.
Careful not to over flow the syrup, as placing the top crust my get a little sticky and you won't get a good seal, connecting with the bottom crust.
make a few holes in crust, sprinkle with sugar.
bake 375o for 30 -35 minutes, until crust is golden brown.
Serve warm.

Creamy Orange Shake (like Orange Julius)
1/3 cup frozen orange juice concentrate
1/2 tsp. vanilla
1/2 cup milk
5-6 ice cubes
1/4 cup sugar
2 scoops vanilla ice cream
1/2 cup water (optional)
Combine ingredients in blender until smooth. Can be kept in the refrigerator 1 day. Serves 4.
Cafe Vienna
1/2 cup instant coffee
2/3 tsp. cinnamon
2/3 cup sugar
1 tsp. dried orange peel
2/3 cup nonfat dry milk (optional)
Stir ingredients together. Process in a blender until powdered. Makes 1 1/3 cups mix.
*Attach this note to the jar if making a jar mix:
Use 2 teaspoons to 1 cup of hot water.
Swiss Mocha
1/2 cup instant coffee
2 Tbsp. cocoa
1/2 cup sugar
1/4 tsp. vanilla
1 cup nonfat dry milk
Stir ingredients together. Process in a blender until powdered. Makes 2 cups mix.
*Attach this note to the jar if making a jar mix:
Use 1 cup of hot water and 2 tablespoons of coffee mix for each cup of coffee.

Grandma Cassa's Crispy garlic fried potatoes.
Large iron skillet
Thin slices of potato's and whole lot of garlic cloves diced.
Bacon grease is best . Use what you have.
Get the oil hot add potatoes and garlic so not to crowd if you need to make more do it in batches.
Fry until crisp. If garlic gets too brown discard or eat it.

Has to be a story behind this recipe. Your right! Here it is.
Grandma Cassa was a wonderful Italian cook. My favorite was her garlic fried potatos. I was right there watching and waiting . Sight and aroma of spuds and garlic swimming and sputtering in the skillet enhances my taste buds 64 years later.... Eating them was better then watching. When my mom appeared to take me to a movie. Wasn't long into the flick when mom noticed everyone moving to another seats , she stuffed as many mints and chewing gum in my mouth as it would hold .Nothing would kill the smell of garlic permeating the theater.
Mom was so embarrassed. I was back in grandma's kitchen the next day.
The ultimate Candied Sweet Potatoes
4-6 sweet potatoes, sliced and cooked until tender.
Mix 1 cup dark brown sugar
1/4 cup butter
1/2 tsp salt
1/4 cup water
in heavy skillet.
When liquid is bubbly add slices of the sweet potatoes cook slowly turning occasionally.
Cook until potatoes are well glazed.

Blend together:
1 cup sugar
1 cup flour
1 tsp baking soda
Add to other ingredients and mix well:
1/2 cup Hershey's cocoa
1/2 tsp salt
1 egg
3 tbs melted butter
1 cup hot water
1 tsp vanilla
Bake 25 minutes. Makes one layer.
Great for the Microwave.
Use a 7 in by 2 inch round dish or some other microwave safe dish or pan.
Line bottom with waxed paper sprayed with baker's joy baking spray.
Repeat all: For another layer or cut first layer in half and and spread icing or whipped cream , what ever!!
This baked Bean Dish will get you rave reviews.
You will need:
1/2 box of dark brown sugar
1 bottle chili sauce
4 normal size cans of Baked beans with sauce. No! Bush's type beans.
Note: Canned products are getting smaller. Might need 5 cans .
Mix all together inside a small roaster type pan . Cover.

2/1/2 tsp. baking powder
3 tbs sugar
3/4 tsp salt
1 egg
3/4 cup milk
3 tbs oil or melted butter
Sift flour,baking powder,sugar and salt together, add egg, milk and oil or butter to dry ingredients.
Cook as usual for pan cakes.

1 c. wh. sugar
1 c br. sugar
1 c. shortening
2 eggs
1 tsp vanilla
2 c flour
1 tsp baking powder
1 tsp b. soda
1 cup oats
1 c corn flakes ( crush in your hands)
1 c nuts
1 c choc chips.
cream sugar, eggs, short., eggs, vanilla, add nuts and ch. chips. stir in rest of indgr.
now you are to use an ice cream scoop to place on cookie sheet but i don't .
they will look under cooked when done but they are done.
bake 350for 10min's.
let them cool and they will look like a buffalo chip off the prairie. they re very good with vanilla ice cream.

1 recipe Medium White Sauce: Consisting of the following ingredients.
2 tbs butter
2 tbs flour
1/2 tsp salt
1/8 tsp black pepper
1 cup whole milk
To prepare Sauce:
Melt the butter in a medium pan add flour cook on low heat until flour is absorbed into the butter making a Roux.
Then whisk in the milk ,salt and pepper until sauce is creamy thickened.
Add
2 -151/4 oz cans of good whole kernel corn that has been drained and crushed.
Stir together until well blended . serve hot.
1 lb. good hot sausage: cut in pieces.
1 large green bell pepper: slices in strips.
1 med onion: sliced
Pasta of choice about 2-4 cups cooked
1 jar Scaloppines pasta sauce or whatever you have.
Swig of good dark sweet wine
Fry peppers and onion until cooked through . Remove then fry the sausage until well browned.
Place all together in casserole dish
add Parmesan cheese or any other Italian cheeses on top.
Mozzarella also good.
Slip into oven until hot and bubbly.

Cassa Apple Pie Applaudite
6 cups peeled thin sliced tart apples
2/3 cup sugar
1/4 tsp nutmeg
1 tsp lemon juice
1 /8 tsp salt
1/4 tsp connamon
1 tbsp butter
1, 9 in, prepared pie crust.
in a seperate bowl, mix apples and the first five ingredients,. until well coated.
Fill bottom crust with the apple mixture.
dot middle of the pie with the butter.
Place top crust over the filling. fold crust under and crimp edges with floured fork tines.
glaze top crust with milk . using a pastry brush.
Bake in hot oven 425o for 40 minutes.
Serve hot with chedder cheese or cold with ice cream.

i cup other: as nuts, raisind, dates ,can fruit drained, pie filling or one of you own ideas.
My newest add-in: raisin, rum, nut banana . Or: crushed up Christmas cookies banana , nut.

Beat theses ingredients together
Wet
2 cups flour
1/2 tsp baking soda
1 tsp salt
mix well.
add to wet
bake in loaf pan 350o for 1 hour 10-15 minutes. Test with a wooden pic.
